- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Add garlic and cook for 1 minute until fragrant.
- Pour in vegetable broth and add potatoes. Bring to a boil.
- Reduce heat and simmer for 15 minutes until potatoes are tender.
- Stir in kale, salt, pepper, and thyme. Cook for 5 minutes until kale is wilted.
- Serve hot.
