Ingredients
  

For the Soup
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 2 cups potatoes diced
  • 2 cups kale chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in vegetable broth and add potatoes. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes until potatoes are tender.
  6. Stir in kale, salt, pepper, and thyme. Cook for 5 minutes until kale is wilted.
  7. Serve hot.
