White Bean and Kale Soup with Parmesan

Ingredients
  

For the Soup Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 4 cups chicken or vegetable broth
For the Main Ingredients
  • 2 cans white beans rinsed and drained
  • 2 cups kale chopped
  • 1/4 cup Parmesan cheese grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Equipment

  • Large pot
  • Wooden spoon

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Cook until softened, about 5 minutes.
  3. Pour in the broth and bring to a simmer.
  4. Add the white beans and chopped kale. Simmer for 15 minutes.
  5. Stir in grated Parmesan cheese, salt, and black pepper.
  6. Cook for another 5 minutes, then serve hot.
