Whipped Feta Pumpkin Hummus Swirl

Ingredients
  

For the Hummus
  • 400 g Chickpeas drained and rinsed
  • 1/4 cup Tahini
  • 1/4 cup Lemon juice freshly squeezed
  • 2 cloves Garlic minced
  • 2 tablespoons Olive oil plus more for drizzling
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Salt or to taste
For the Whipped Feta
  • 200 g Feta cheese crumbled
  • 2 tablespoons Cream cheese softened
  • 1 tablespoon Olive oil
For the Pumpkin Swirl
  • 1/4 cup Pumpkin puree not pie filling
  • 1/2 teaspoon Pumpkin pie spice

Method
 

  1. Make the hummus: Combine chickpeas, tahini, lemon juice, garlic, 2 tablespoons olive oil, cumin, and salt in a food processor. Process until smooth, scraping down the sides as needed. Add a tablespoon or two of water if needed to reach desired consistency.
  2. Make the whipped feta: In a separate bowl, combine crumbled feta, softened cream cheese, and 1 tablespoon olive oil. Beat with a mixer or whisk until smooth and creamy.
  3. Make the pumpkin swirl: In a small bowl, stir together pumpkin puree and pumpkin pie spice.
  4. Assemble: Spread the hummus into a serving dish. Dollop spoonfuls of the whipped feta and pumpkin mixture over the hummus. Use a spatula or toothpick to swirl the ingredients together.
  5. Serve: Drizzle with additional olive oil and serve with pita bread, crackers, or vegetables.

Notes

You can adjust the amount of lemon juice and salt to your preference. For a spicier kick, add a pinch of cayenne pepper to the hummus.
