Ingredients
  

For the Crust
  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 tbsp granulated sugar
For the Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream whipped
For the Topping
  • 1 cup fresh raspberries
  • 2 tbsp raspberry jam

Method
 

  1. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  2. Press the mixture into the bottom of each serving cup to form the crust.
  3. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Fold in the whipped cream gently until fully incorporated.
  5. Spoon the cheesecake filling over the crust in each cup.
  6. Top with fresh raspberries and drizzle with raspberry jam.
  7. Chill in the refrigerator for at least 2 hours before serving.
