Turkey Stuffed Peppers

Ingredients
  

For the Peppers
  • 4 bell peppers (any color) tops cut off and seeds removed
For the Filling
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese optional

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground turkey over medium heat until browned. Drain excess fat.
  3. Add the onion, garlic, diced tomatoes, oregano, basil, salt, and black pepper to the skillet. Cook for 5 minutes.
  4. Stir in the cooked rice and mix well.
  5. Place the hollowed-out peppers in a baking dish. Fill each pepper with the turkey and rice mixture.
  6. If using cheese, sprinkle it on top of each pepper.
  7. Bake for 25-30 minutes, or until the peppers are tender.

Notes
