Ingredients
  

For the Turkey Meatballs
  • 1 lb ground turkey
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Zucchini Noodles
  • 4 medium zucchinis spiralized
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/4 tsp salt

  • Mixing bowl

Method
 

  1. Preheat a large skillet over medium heat.
  2. In a mixing bowl, combine ground turkey, breadcrumbs, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
  3. Shape the mixture into small meatballs, about 1 inch in diameter.
  4. Add the meatballs to the skillet and cook for 10-12 minutes, turning occasionally, until browned and cooked through.
  5. While the meatballs cook, spiralize the zucchinis into noodles.
  6. In a separate pan, heat olive oil over medium heat. Add the zucchini noodles, garlic powder, and salt. Sauté for 2-3 minutes until just tender.
  7. Divide the zucchini noodles into bowls and top with the cooked turkey meatballs.
