Ingredients
  

For the Salad
  • 2 cans tuna in water, drained
  • 1 can white beans, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
For the Dressing
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • salt and pepper to taste

Method
 

  1. In a large bowl, combine the tuna, white beans, red onion, and parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for up to 2 hours before serving.
