Tomato Basil Tortellini Soup with Spinach

A comforting soup with cheese tortellini, tomatoes, basil, and fresh spinach.

Ingredients
  

For the Soup
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Tortellini and Spinach
  • 9 oz cheese tortellini fresh or frozen
  • 2 cups fresh spinach chopped

Equipment

  • Large pot
  • Wooden spoon

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, basil, salt, and pepper. Bring to a boil.
  4. Reduce heat to a simmer and add tortellini. Cook according to package instructions, about 7-9 minutes.
  5. Stir in spinach and cook until wilted, about 2 minutes.
  6. Serve hot.

Notes

For extra flavor, top with grated Parmesan cheese before serving.
