Method
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in crushed tomatoes, vegetable broth, basil, salt, and pepper. Bring to a boil.
- Reduce heat to a simmer and add tortellini. Cook according to package instructions, about 7-9 minutes.
- Stir in spinach and cook until wilted, about 2 minutes.
- Serve hot.
Notes
For extra flavor, top with grated Parmesan cheese before serving.
