- In a skillet over medium-high heat, cook the ground chicken until browned. Drain any excess fat.
- Add the diced pineapple, sweet chili sauce, soy sauce, sesame oil, minced garlic, and grated ginger to the skillet. Stir to combine.
- Cook for another 3-5 minutes, stirring occasionally, until the sauce has thickened slightly and the chicken is coated.
- Spoon the chicken mixture into the lettuce leaves.
- Garnish with chopped peanuts and cilantro, if desired.
