Sweet Chili Pineapple Chicken Lettuce Cups

Ingredients
  

For the Chicken
  • 1 lb ground chicken
  • 1/2 cup diced pineapple fresh or canned, drained
  • 1/4 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
For Serving
  • 8 large lettuce leaves such as butter or iceberg lettuce
  • 1/4 cup chopped peanuts optional
  • 2 tbsp chopped fresh cilantro optional

Method
 

  1. In a skillet over medium-high heat, cook the ground chicken until browned. Drain any excess fat.
  2. Add the diced pineapple, sweet chili sauce, soy sauce, sesame oil, minced garlic, and grated ginger to the skillet. Stir to combine.
  3. Cook for another 3-5 minutes, stirring occasionally, until the sauce has thickened slightly and the chicken is coated.
  4. Spoon the chicken mixture into the lettuce leaves.
  5. Garnish with chopped peanuts and cilantro, if desired.

Notes

You can adjust the amount of sweet chili sauce to your preference for spice level.
