Super Bowl Stuffed Potato Skins Appetizer

Ingredients
  

For the Potato Skins
  • 6 medium russet potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
For the Filling
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1/4 cup sour cream
  • 2 tbsp green onions chopped

  • Mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce with a fork. Bake for 45 minutes or until tender.
  2. Let potatoes cool slightly. Cut in half lengthwise and scoop out the flesh, leaving a 1/4-inch shell.
  3. Brush potato skins with olive oil and sprinkle with salt. Place skin-side up on a baking sheet and bake for 10 minutes.
  4. Flip skins and fill with cheese and bacon. Bake for another 5 minutes or until cheese melts.
  5. Top with sour cream and green onions before serving.
