Ingredients
  

For the Salad
  • 1 pound Rotini pasta uncooked
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red onion finely chopped
  • 1/2 cup Bell pepper diced
  • 1/4 cup Black olives sliced
  • 1/2 cup Parmesan cheese shredded
For the Dressing
  • 1/2 cup Olive oil
  • 1/4 cup Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Garlic powder

Equipment

  • Large pot
  • Colander
  • Large mixing bowl

Method
 

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, bell pepper, black olives, and Parmesan cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill for at least 30 minutes before serving.

Notes

You can add grilled chicken or shrimp for a more substantial meal. Feel free to customize with your favorite vegetables.
