- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned.
- Add the onion and garlic to the skillet and cook until softened.
- Stir in the cooked rice, diced tomatoes, oregano, salt, and black pepper. Cook for 2-3 minutes.
- Fill each bell pepper with the beef mixture. Top with shredded cheese.
- Bake for 30-35 minutes, or until the peppers are tender and the cheese is melted.
