Ingredients
  

For the Shortcakes
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold and cubed
  • 2/3 cup heavy cream
For the Strawberries
  • 1 lb fresh strawberries hulled and sliced
  • 2 tbsp granulated sugar
For the Whipped Cream
  • 1 cup heavy cream cold
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined. Do not overmix.
  5. Drop dough onto the baking sheet in 6 equal portions. Bake for 12-15 minutes until golden.
  6. While the shortcakes bake, mix sliced strawberries with sugar in a bowl. Let sit for 10 minutes.
  7. Whip the heavy cream, powdered sugar, and vanilla until soft peaks form.
  8. Split the shortcakes in half. Layer with strawberries and whipped cream.
