Ingredients
  

For the Zucchini
  • 2 medium zucchinis sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
For Garnish
  • 1 tbsp lemon zest
  • 2 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in a pan over medium heat.
  2. Add sliced zucchini and cook for 5 minutes, stirring occasionally.
  3. Season with salt and pepper. Cook for another 3 minutes until tender.
  4. Remove from heat and garnish with lemon zest and parsley.
