Ingredients
  

For the Salad
  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup kalamata olives pitted
  • 1/4 cup feta cheese crumbled
For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and kalamata olives.
  2. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and black pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Sprinkle the crumbled feta cheese on top before serving.
