Ingredients
  

For the Lemon Filling
  • 1 cup granulated sugar
  • 2 tbsp lemon zest
  • 1/2 cup lemon juice freshly squeezed
  • 3 large eggs
For the Crust
  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter cold and cubed

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour and powdered sugar for the crust. Cut in butter until crumbly.
  3. Press the crust mixture into a baking dish and bake for 15 minutes.
  4. Whisk sugar, lemon zest, lemon juice, and eggs for the filling until smooth.
  5. Pour the filling over the baked crust and bake for another 20 minutes.
  6. Let cool before serving.
