Spring Lemon Chicken

Ingredients
  

For the Chicken
  • 4 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
For the Lemon Sauce
  • 1/4 cup lemon juice freshly squeezed
  • 2 tbsp butter
  • 1 tbsp honey
  • 1 tsp garlic minced

Method
 

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Add the chicken and cook for 6-7 minutes per side until golden and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt butter. Add garlic and cook for 1 minute until fragrant.
  5. Stir in lemon juice and honey. Simmer for 2-3 minutes until slightly thickened.
  6. Return the chicken to the skillet and coat with the sauce. Serve warm.
