Ingredients
  

For the Vegetables
  • 2 cups asparagus, trimmed
  • 1 zucchini, sliced lengthwise
  • 1 yellow squash, sliced lengthwise
  • 1 red bell pepper, quartered
For the Marinade
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and black pepper to make the marinade.
  3. Toss the vegetables with the marinade until evenly coated.
  4. Place the vegetables on the grill and cook for 3-5 minutes per side, or until tender and lightly charred.
  5. Remove from the grill and serve immediately.
