Ingredients
  

For the Lemon Bars
  • 1 cup all-purpose flour
  • 1/2 cup butter softened
  • 1/4 cup powdered sugar
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tbsp lemon zest
  • 1/4 cup lemon juice
For the Berry Parfaits
  • 2 cups mixed berries strawberries, blueberries, raspberries
  • 1 cup whipped cream
  • 1/2 cup granola

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Mix flour, butter, and powdered sugar to form a dough. Press into a baking dish.
  3. Bake for 15 minutes until lightly golden.
  4. Whisk eggs, granulated sugar, lemon zest, and lemon juice. Pour over the baked crust.
  5. Bake for another 15 minutes until set. Let cool before cutting into bars.
  6. Layer berries, whipped cream, and granola in glasses for the parfaits.
