  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Method
 

  1. Wash and dry the mixed greens and cherry tomatoes.
  2. Slice the avocado and halve the cherry tomatoes.
  3. Combine all salad ingredients in a large bowl.
  4. Whisk together the olive oil and lemon juice for the dressing.
  5. Drizzle the dressing over the salad and toss gently.
