Ingredients
  

For the Marinade
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 2 tbsp soy sauce
  • 2 cloves garlic minced
For the Grill
  • 1.5 lbs chicken breasts boneless, skinless
  • 2 bell peppers sliced
  • 1 red onion sliced

Method
 

  1. In a bowl, whisk together olive oil, lemon juice, soy sauce, and garlic to make the marinade.
  2. Place chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and grill for 6-7 minutes per side, or until fully cooked.
  5. Grill bell peppers and red onion for 3-4 minutes, turning occasionally, until slightly charred.
  6. Serve grilled chicken with vegetables.
