- Preheat the oven to 375°F (190°C).
- In a bowl, mix flour and salt for the crust. Cut in butter until the mixture resembles coarse crumbs. Add ice water and stir until the dough comes together. Roll out the dough and press it into a 9-inch pie dish.
- Heat olive oil in a skillet over medium heat. Add mushrooms and cook until softened, about 5 minutes. Add spinach and cook until wilted. Remove from heat and let cool slightly.
- In a bowl, whisk eggs, milk, salt, and pepper. Stir in the mushroom-spinach mixture and cheese. Pour the filling into the crust.
- Bake for 45 minutes, or until the filling is set and the crust is golden. Let cool for 5 minutes before slicing.
