- Preheat the oven to 375°F (190°C). Grease a muffin tin or line with silicone cups.
- In a mixing bowl, whisk the eggs, milk, salt, and pepper until well combined.
- Stir in the chopped spinach and crumbled feta cheese.
- Pour the mixture evenly into the muffin tin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until the egg muffins are set and lightly golden.
- Let cool slightly before removing from the tin. Serve warm or store for meal prep.
