Spiced Chai Snickerdoodle Blondies

These blondies combine the warm spices of chai with the classic cinnamon-sugar coating of snickerdoodles.

Ingredients
  

For the Blondies
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon chai spice blend or a mix of cinnamon, cardamom, ginger, and cloves
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For the Snickerdoodle Topping
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together the melted butter and sugar until well combined.
  3. Beat in the egg and vanilla extract until smooth.
  4. In a separate bowl, whisk together the flour, chai spice blend, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing with a spatula until just combined. Do not overmix.
  6. Spread the batter evenly into the prepared baking pan.
  7. In a small bowl, combine the 2 tablespoons of sugar and 1 teaspoon of cinnamon for the topping. Sprinkle this mixture evenly over the blondie batter.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  9. Let the blondies cool completely in the pan before cutting into squares.

Notes

You can adjust the amount of chai spice to your preference. For a stronger chai flavor, add more spices.
