Course: Dessert
Cuisine: French

Ingredients

For the Madeleines
  • 3 large eggs at room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted and slightly cooled
For Decoration (Optional)
  • 1/2 cup black candy melts
  • 1/4 cup white candy melts

Equipment

  • Madeleine pan
  • Mixing bowls
  • Whisk
  • Spatula

Method

  1. Preheat your oven to 350°F (175°C). Grease and flour your madeleine pan, or spray with non-stick baking spray.
  2. In a large bowl, whisk together the eggs and granulated sugar until pale and fluffy, about 3-5 minutes.
  3. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the melted butter until the batter is smooth.
  7. Spoon the batter into the prepared madeleine pan, filling each mold about two-thirds full.
  8. Bake for 10-12 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  9. Let the madeleines cool in the pan for a minute before transferring them to a wire rack to cool completely.
  10. Once cooled, you can decorate them. Melt the black candy melts and drizzle over the madeleines to resemble Snoopy's doghouse. Use white candy melts for details if desired.

Notes

For best results, use room temperature eggs. You can also chill the batter for 30 minutes before baking for a slightly chewier texture.
