Smoked Sausage and Corn Salad

A simple and flavorful salad perfect for barbecues.

Ingredients
  

For the Salad
  • 1 lb Smoked sausage sliced into 1/2-inch rounds
  • 4 cups Corn kernels fresh or frozen
  • 1 cup Red bell pepper diced
  • 1/2 cup Red onion finely chopped
  • 1/4 cup Fresh cilantro chopped
For the Dressing
  • 1/3 cup Olive oil
  • 2 tbsp Apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Equipment

  • Large bowl
  • Knife
  • Cutting board

Method
 

  1. Preheat your grill to medium heat.
  2. Grill the sausage slices for about 3-4 minutes per side, until lightly charred.
  3. If using fresh corn, grill the cobs for about 10 minutes, turning occasionally, until lightly charred. Cut the kernels off the cobs.
  4. In a large bowl, combine the grilled sausage, corn kernels, diced red bell pepper, chopped red onion, and chopped cilantro.
  5. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve the salad immediately or chill for later.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
