Ingredients
  

For the Soup
  • 1 lb boneless, skinless chicken breasts
  • 1 yellow onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Gnocchi
  • 16 oz gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach

Equipment

  • Cutting board

Method
 

  1. Place chicken, onion, carrots, celery, garlic, chicken broth, thyme, rosemary, salt, and pepper in the slow cooker.
  2. Cover and cook on low for 4 hours.
  3. Remove chicken and shred it with two forks. Return to the slow cooker.
  4. Add gnocchi, heavy cream, and spinach. Stir well.
  5. Cover and cook on high for 15 minutes or until gnocchi is tender.

Notes

For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir into the soup before adding the gnocchi.
