Method
- Place chicken, onion, carrots, celery, garlic, chicken broth, thyme, rosemary, salt, and pepper in the slow cooker.
- Cover and cook on low for 4 hours.
- Remove chicken and shred it with two forks. Return to the slow cooker.
- Add gnocchi, heavy cream, and spinach. Stir well.
- Cover and cook on high for 15 minutes or until gnocchi is tender.

For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir into the soup before adding the gnocchi.
