Ingredients
  

For the Main Dish
  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup chickpeas cooked
  • 1 cup spinach chopped
For the Dressing
  • 2 tbsp lemon juice
  • 1 tbsp tahini
  • 1 tsp maple syrup

Method
 

  1. Cook quinoa in vegetable broth according to package instructions.
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until soft.
  3. Add chickpeas and spinach to the skillet. Cook until spinach wilts.
  4. Mix cooked quinoa with the skillet ingredients.
  5. Whisk together lemon juice, tahini, and maple syrup in a small bowl.
  6. Drizzle the dressing over the quinoa mixture before serving.
