Ingredients
  

For the Chicken
  • 1 whole chicken (about 4 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 lemon, halved
  • 4 garlic cloves, crushed

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels. Rub the chicken with olive oil, then season with salt, pepper, and thyme.
  3. Place the lemon halves and garlic cloves inside the chicken cavity.
  4. Place the chicken in a roasting pan, breast-side up. Roast for about 60 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.
  5. Remove from the oven and let rest for 10 minutes before carving.
