Ingredients
  

Vegetables
  • 2 cups chopped carrots
  • 2 cups chopped broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup quartered red onions
Seasoning
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine all the chopped vegetables.
  3. Drizzle the olive oil over the vegetables and sprinkle with salt, black pepper, and garlic powder. Toss to coat evenly.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
  6. Remove from the oven and serve warm.
