Method
- Wash and chop all the vegetables for the salad.
- Combine the mixed greens, cherry tomatoes, cucumber, and avocado in a large mixing bowl.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper to make the dressing.
- Divide the salad into 4 meal prep containers and drizzle with the dressing. Store in the refrigerator for up to 3 days.
