- Wash and prepare all salad ingredients. Tear lettuce into bite-sized pieces. Slice the cucumber and chop the tomatoes. Shred the carrot.
- In a small bowl or jar, whisk together the olive oil, vinegar, Dijon mustard, salt, and pepper for the dressing.
- Combine the prepared salad ingredients in a large bowl.
- Pour the dressing over the salad and toss gently to coat.
- Serve immediately.
Notes
Feel free to add other vegetables like bell peppers, onions, or radishes. You can also add protein such as grilled chicken or chickpeas.
