Simple Egg and Avocado Breakfast Quesadilla

A quick and easy breakfast quesadilla with eggs and avocado.

Ingredients
  

  • 2 large eggs
  • 1 medium flour tortilla
  • 1/2 avocado sliced
  • 1/4 cup shredded cheese
  • salt to taste
  • pepper to taste

  • Skillet
  • Spatula

Method
 

  1. Whisk the eggs in a bowl and season with salt and pepper.
  2. Heat a skillet over medium heat and pour in the eggs. Scramble until cooked.
  3. Place the tortilla in the skillet. Spread the scrambled eggs, avocado slices, and cheese on one half of the tortilla.
  4. Fold the tortilla in half and cook for 1-2 minutes on each side until the cheese melts and the tortilla is golden.
  5. Remove from the skillet, slice, and serve.

Notes

You can add salsa or hot sauce for extra flavor.
