Shrimp Jambalaya

Ingredients
  

For the Jambalaya
  • 1 lb shrimp peeled and deveined
  • 1 cup long-grain rice
  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
For Garnish
  • green onions chopped
  • parsley chopped

  • Wooden spoon

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, celery, and garlic. Cook until softened, about 5 minutes.
  3. Stir in rice, diced tomatoes, chicken broth, and Cajun seasoning. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
  5. Add shrimp and cook for 5 minutes or until shrimp turn pink.
  6. Garnish with green onions and parsley before serving.

Notes

For extra heat, add a pinch of cayenne pepper. You can also use andouille sausage for a meatier version.
