Ingredients
  

For the Sausage and Veggies
  • 1 lb Italian sausage links cut into 1-inch pieces
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 red onion sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. In a large bowl, combine sausage, broccoli, bell pepper, and red onion.
  3. Drizzle with olive oil and sprinkle with garlic powder, oregano, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture in a single layer on the prepared sheet pan.
  5. Roast for 20-25 minutes, stirring once halfway through, until sausage is cooked and vegetables are tender.
