- Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.
- Place the salmon fillets on one side of the sheet pan. Drizzle with olive oil and season with salt, pepper, garlic powder, and lemon zest.
- In a bowl, toss the broccoli, red bell pepper, and zucchini with olive oil, salt, and pepper. Spread the vegetables on the other side of the sheet pan.
- Bake for 18-20 minutes, or until the salmon is cooked through and the vegetables are tender.
- Serve immediately.
