Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Vegetables
  • 1 lb baby potatoes halved
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. In a bowl, mix honey, Dijon mustard, olive oil, garlic powder, salt, and pepper. Coat chicken breasts with the mixture.
  3. Toss potatoes, broccoli, and bell pepper with olive oil, salt, and pepper. Spread on the sheet pan.
  4. Place chicken breasts on the sheet pan among the vegetables.
  5. Bake for 25-30 minutes until chicken is cooked through and vegetables are tender.
