- Preheat your oven to 375°F (190°C). Cook macaroni according to package directions. Drain and set aside.
- In a saucepan, melt 1/4 cup butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
- Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Stir in the pumpkin puree, salt, pepper, nutmeg, sage, and thyme. Cook for 2 minutes, stirring.
- Remove from heat. Stir in the cheddar and Gruyere cheeses until melted and smooth.
- Add the cooked macaroni to the cheese sauce and stir to combine.
- Pour the mixture into a greased baking dish.
- In a small bowl, combine breadcrumbs and 2 tablespoons melted butter. Sprinkle over the mac and cheese.
- Bake for 20-25 minutes, or until bubbly and lightly browned.
Notes
You can add cooked bacon or sausage for extra flavor. Adjust spices to your preference.
