Roasted Garlic Mashed Potatoes

Ingredients
  

For the Potatoes
  • 2 lbs Yukon Gold potatoes peeled and quartered
  • 4 cloves garlic roasted
  • 1/2 cup butter unsalted
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • Potato masher
  • Mixing bowl
  • Baking sheet

Method
 

  1. Preheat the oven to 400°F (200°C). Wrap garlic cloves in foil and roast for 20 minutes until soft.
  2. Boil potatoes in salted water for 15 minutes or until tender. Drain well.
  3. Mash potatoes with butter, cream, roasted garlic, salt, and pepper until smooth.
  4. Serve warm.
