Quinoa Salad with Lemon Dressing

Ingredients
  

For the Salad
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
For the Lemon Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and let it cool.
  2. In a large mixing bowl, combine cooled quinoa, cherry tomatoes, cucumber, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, honey, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for up to 2 hours before serving.
