- Rinse the quinoa under cold water and drain.
- In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the quinoa and vegetables. Toss to combine.
- Divide into bowls and serve.
