Quinoa and Veggie Bowl

Ingredients
  

For the Quinoa
  • 1 cup quinoa rinsed
  • 2 cups water
For the Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 0.5 cup red onion thinly sliced
For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper

  • Mixing bowl

Method
 

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
  4. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, and red onion.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the quinoa and vegetables. Toss to combine.
  7. Divide into bowls and serve.
