Quick Chickpea Salad with Tomatoes and Herbs

Ingredients
  

  • 2 cans chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. In a large bowl, combine chickpeas, cherry tomatoes, red onion, and parsley.
  2. Drizzle with olive oil and lemon juice.
  3. Season with salt and black pepper.
  4. Toss gently to combine.
  5. Serve immediately or refrigerate for up to 2 hours.

Notes

For extra flavor, add crumbled feta cheese or diced cucumber.
