Ingredients
  

For the Pumpkin Spice Syrup
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1/4 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
For the Latte
  • 1 cup milk
  • 2 tablespoons pumpkin spice syrup or to taste
  • 1/2 cup hot brewed coffee
  • 1 tablespoon whipped cream optional
  • 1/4 teaspoon pumpkin pie spice optional, for garnish

Method
 

  1. Make the pumpkin spice syrup: Combine water, sugar, pumpkin puree, and pumpkin pie spice in a saucepan. Heat over medium heat, stirring until sugar dissolves and mixture is smooth.
  2. Remove from heat and stir in vanilla extract. Let cool.
  3. Assemble the latte: Heat milk in a saucepan or microwave until hot. Do not boil.
  4. Pour hot coffee into a mug. Add the pumpkin spice syrup and stir.
  5. Pour the hot milk into the mug. Stir gently.
  6. Top with whipped cream and a sprinkle of pumpkin pie spice, if desired.

Notes

You can store leftover pumpkin spice syrup in an airtight container in the refrigerator for up to 2 weeks.
