- Make the pumpkin spice syrup: Combine water, sugar, pumpkin puree, and pumpkin pie spice in a saucepan. Heat over medium heat, stirring until sugar dissolves and mixture is smooth.
- Remove from heat and stir in vanilla extract. Let cool.
- Assemble the latte: Heat milk in a saucepan or microwave until hot. Do not boil.
- Pour hot coffee into a mug. Add the pumpkin spice syrup and stir.
- Pour the hot milk into the mug. Stir gently.
- Top with whipped cream and a sprinkle of pumpkin pie spice, if desired.
Notes
You can store leftover pumpkin spice syrup in an airtight container in the refrigerator for up to 2 weeks.
