Ingredients
  

For the Crust
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
For the Filling
  • 4 large eggs
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 2 cups pecans, chopped

Method
 

  1. Preheat your oven to 350°F. Grease a 9x13 inch baking pan.
  2. Make the crust: In a bowl, mix flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Press evenly into the prepared pan.
  3. Bake the crust for 15 minutes until lightly golden.
  4. Make the filling: Whisk eggs, corn syrup, sugar, melted butter, and vanilla until smooth. Stir in pecans. Pour over the baked crust.
  5. Bake for 30 minutes until the filling is set. Cool completely before cutting into bars.
