Ingredients
  

For the Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
For the Sauce
  • 8 oz mushrooms sliced
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup grated parmesan cheese
  • 1 tsp dried thyme

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken, salt, and pepper. Cook until browned, about 5-6 minutes. Remove from skillet and set aside.
  2. In the same skillet, add mushrooms and cook until softened, about 3-4 minutes. Add garlic and cook for 1 minute until fragrant.
  3. Pour in heavy cream, parmesan cheese, and thyme. Stir until the sauce thickens slightly, about 2-3 minutes.
  4. Return the chicken to the skillet and stir to coat in the sauce. Simmer for 2-3 minutes until heated through.
