Ingredients
  

For the Salad
  • 1 cup orzo pasta
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives pitted and sliced
  • 1/4 cup red onion finely diced
  • 1 cup cherry tomatoes halved
For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Cook the orzo according to package instructions. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooked orzo, feta cheese, olives, red onion, and cherry tomatoes.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
