One Pot Creamy Tomato Basil Pasta

A simple and creamy pasta dish made in one pot with tomatoes and fresh basil.

Ingredients
  

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup fresh basil chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup parmesan cheese grated

  • Large pot
  • Wooden spoon

Method
 

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  2. Add diced tomatoes, heavy cream, salt, and black pepper. Stir to combine.
  3. Add the penne pasta and 3 cups of water. Bring to a boil, then reduce heat to a simmer.
  4. Cook for 12-15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
  5. Remove from heat and stir in chopped basil and grated parmesan cheese.
  6. Serve immediately.

Notes

For a lighter version, substitute half-and-half for the heavy cream.
