One Pot Chicken and Vegetable Orzo

Ingredients
  

For the Chicken and Vegetables
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts diced
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 cup carrots diced
  • 1 cup zucchini diced
For the Orzo and Seasoning
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup parsley chopped

  • Wooden spoon

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned, about 5 minutes.
  2. Add onion, garlic, carrots, and zucchini. Cook for 3-4 minutes until vegetables soften.
  3. Stir in orzo, chicken broth, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and liquid is absorbed.
  5. Remove from heat and stir in chopped parsley. Serve warm.
