Ingredients
  

For the Beef and Mushrooms
  • 1 lb ground beef
  • 8 oz cremini mushrooms sliced
  • 1 yellow onion diced
  • 2 cloves garlic minced
For the Rice
  • 1 cup long-grain white rice rinsed
  • 2 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • Large skillet or Dutch oven
  • Wooden spoon

Method
 

  1. Heat a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon.
  2. Add the mushrooms, onion, and garlic. Cook until the vegetables soften, about 5 minutes.
  3. Stir in the rice, beef broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and liquid is absorbed.
  5. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
