- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- In a large bowl, mix peaches, brown sugar, lemon juice, vanilla extract, and cinnamon. Spread evenly in the baking dish.
- In another bowl, combine flour, brown sugar, baking powder, and salt. Stir in melted butter and boiling water until smooth.
- Drop spoonfuls of the topping mixture over the peaches. Bake for 45 minutes or until golden brown.
