Ingredients
  

For the Peach Filling
  • 6 cups peaches peeled and sliced
  • 1/2 cup brown sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
For the Cobbler Topping
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter melted
  • 1/4 cup boiling water

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, mix peaches, brown sugar, lemon juice, vanilla extract, and cinnamon. Spread evenly in the baking dish.
  3. In another bowl, combine flour, brown sugar, baking powder, and salt. Stir in melted butter and boiling water until smooth.
  4. Drop spoonfuls of the topping mixture over the peaches. Bake for 45 minutes or until golden brown.
